What internal temperature should chicken reach?

The USDA recommends cooking chicken to a minimum internal temperature of 165 degrees F (74 degrees C) measured at the thickest part of the meat, away from the bone. Leave-in thermometers monitor temperature continuously and can trigger an alarm when the target temperature is reached. Most home cooks benefit from both types: an instant-read for grilling and stovetop use where spot-checking is natural, and a leave-in for oven roasting where the oven door stays closed and continuous monitoring is valuable.

How do I calibrate a meat thermometer?

Most modern digital instant-read thermometers are factory-calibrated and cannot be user-calibrated.
