A silicone spatula is the most versatile kitchen utensil for non-stick cookware because the flexible silicone head does not scratch non-stick coatings the way a metal spatula does. Silicone rated to 400 to 500 degrees Fahrenheit handles stirring on the stovetop and scraping batter from a bowl; silicone rated to 600 degrees Fahrenheit is appropriate for candy making and high-heat cooking tasks. A one-piece molded construction with no seam between the head and the handle does not trap food and does not pull apart with heavy use. A mini spatula (6-inch head) fits into small jars; a full-size spatula (10 to 12-inch) is appropriate for sauteing and folding.
